How do I download transactions to excel file

You'll only be able to download the statements, not the pending transactions.

On your iPhone, open Wallet, tap the Apple Card, tap "Card Balance", tap one of the statements, tap "Exports Transactions" et then "Comma Separated Values (CSV)". This format is compatible with Microsoft Excel.
