How do I recover a deleted document that I permanently deleted from pages?

If the Pages document was stored on iCloud Drive at the time it was deleted — stored meaning you saved it at least once, then your iCloud account offers a deleted file recovery feature that is valid for only 30 days from the deletion date.
Once you sign into iCloud, click your Avatar in the upper right corner and then select iCloud Settings from that menu. A new screen will appear and on its menu bar, you will find Data Recovery. When you click Data Recovery, you are presented with a panel where any recoverable files will be listed as in this example:

If the file was stored locally rather than in iCloud it can be restored from a backup: Restore your iPhone, iPad or iPod touch from a backup – Apple Support (AU)
If you have saved a copy of the document in a location outside your iPhone, you recover the (undeleted copy of the) document from the location where that copy was saved.
If you do not have a saved copy of the document, you can recover a semi accurate copy of the document by recreating it from your memory of what was included in that document.
