You mentioned adding countries to the Clock widget specifically. While it's not possible to add a country, you can instead use the World Clock widget to show the time in different cities. To do this, you'd press and hold on your Lock screen and then tap Customize, and then tap the Lock screen. Then tap the widget rectangle below the date and time and select Clock > World Clock. Once you've done that, you can tap the widget and tap any of the three cities listed to change them.
