Transferring to a New iPhone:

Use Quick Start. If you a transferring to a new iPhone, then this is the link to use: Use Quick Start to Transfer Data to a new iPhone, iPad, or iPod touch - Apple Support. You'd fist set up this iPhone you've switched to anew, as if you were to sell it. Perform as instructed here, unloading the iCloud logout: What to do Before you Sell, Give Away, or Yrade in your iPhone or iPad - Apple Support. Then, perform the transfer to the new iPhone, this time using Quick Start.

Use Quick Start to transfer data. If you have iOS16, then the iOS cannot be downgraded (and as a result, things would no be just like your iPhone 7).
