There is no set time for updates to occur, only a window of about 1 AM - 5 AM.

The length of time for the update will depend on the speed of your Internet connection. Might be anywhere from 10-60 minutes or more.

Because many millions of phones will be updating, it might take a few days before you see that the update has occurred.

You mean manually instead of waiting for the automatic update to occur? Sure, but remember that many millions of users are trying to do the same thing, so it may take a few tries.
