Pairing Apple Watch to a New iPhone:
A. Go Here: If you can't Pair an Apple Watch with your iPhone - Apple Support
B. Contact Apple Support:
Not being able to pair, due to not unpairing this, is an antitheft measure. You should have unpaired this from your older iPhone. Having not done so, you may not be able to use this on your new iPhone. So, contact Apple Support, seeing what your options are from here.
