I missed the single sentence on Amazon that said: "Apple Watch requires an iPhone 8 or later with the latest iOS version." And I missed the Amazon return window. This will be the second Apple watch I've had trouble with: the first one stopped charging.

Unfortunately, a new Apple Watch SE, won't pair with you an original iPhone SE. Your watch came with WatchOS9. That requires an iPhone which is capable of running iOS 16, which your iPhone is not capable of running. Since you have missed the window to return your watch, you can either sell it to someone OR buy yourself a newer, more modern iPhone. There really aren't any other options available to you.
