If it is a model A2896 (manufactured for China, HongKong, Macao markets) it cannot support eSIMs.
All other 14 Pro Max models (A2651, A2893, A2894, A2895) support eSIMs.

Who is your carrier? Do they support eSIM? Not all do.
It's pretty simple. eSIM will not show up as an option if your carrier does not support eSIM.
You purchased a gray market phone that was originally sold in China, Hong Kong, or Macau. It does not support eSIMs at all.
The only iPhone 14s w/o eSIM are those intended for the Chinese market.
Sounds like you might have a “Chinese” phone.
Yes, an A2896 model can hold just two physical SIM cards, no eSIMs.
If you desire to use a Chinese-market iPhone …
… you’ll need to obtain a nanoSIM from your carrier.
Presumably you didn’t purchase this phone from in China, from Apple or an authorized reseller ???
I purchased from a local dealer in my country Zimbabwe. Most likely he isn’t an authorized dealer.
