why does it show my email address when i send an text
When people see my message, they see that it is coming from my email or apple id email

Assuming you mean when you send from your phone, check Settings -> Messages -> Send and Receive.
From here you can see what IDs (phone numbers, email addresses, etc.) can be used to send messages, along with a default ID used for new conversations.
From your description it sounds like your new conversations are set to use your email address. Just change it to your phone number.
