I have a friend who is going to help me back up my iphone so I can switch to another newer iphone, if the backup is done on their computer will they have access to all my pictures and messages and how can I have the history erase from their computer once my back up is completed? I do not want them to keep pictures of mine in their computer
Do not allow your friend to back up to a computer. You should instead back up to iCloud as described here.

If you don't trust your "friend", don't let them play about with your unlocked phone. Backing up your phone to iCloud requires no special skill. Do it yourself or take the phone to your local Apple Store for assistance.
