My iPhone update is grayed out
I am trying to update my iPhone 8 without using WiFi, but the update and install button is grayed out.

It should normally explain why it's grayed out under the button. If you post a screenshot of the Software update screen, we can tell you why.
Make sure you have at least 50% of battery and the iPhone is not set to Low Power mode or is connected to power and make sure you have enough storage space for the update.
You need to enable WiFi or connect your iPhone to a computer to perform an update. The iPhone 8 does not support using cellular data to update.
You cannot update an iPhone 8 without Wi-Fi. It does not support 5G, which is the only cellular connection type that allows software updates.
You must connect to Wi-Fi to update the iPhone.
It is likely that you currently do not have access to a power source or a stable internet connection, whether through WiFi or Cellular Data.
My phone is 12 Pro & I’m connected to WiFi, but download/install for latest update is also grayed out. ?
It says must be connected to WiFi which I immediately checked & I am connected. Full battery, etc.
Baffled.
For some reason it thinks you aren't connected to Wi-Fi.
Note it must be an actual Wi-Fi connection. It cannot be a personal hotspot connection.
