Pairing an iPhone and Apple watch that have different wireless carriers

I currently have an iPhone and Apple Watch paired and on a cellular plan with the same wireless carrier. Getting ready to switch to a carrier that doesn't support Apple Watch. I will leave the watch with the old wireless carrier and cellular plan, but move the iPhone to the new wireless carrier and cellular plan. Will everything still function seamlessly? Does the iPhone and Apple Watch need to be with the same wireless carrier to function on a cellular network?

No it definitely won't work the same. Apple states in this article that the Apple Watch and iPhone must be on the same carrier. The only way around this is to set it up as a family member's watch. Keep in mind when you set the watch up as though it's a family member's stand alone watch it will not have all the functions as before.
