Can delivered messages be read and still say delivered?
I sent a text by mistake and deleted it. It went away, but came back to me a day later undelivered. Does this mean he sent it back to me undelivered? Could he still have seen what I wrote?

No, he didn’t send it back. He can’t. It simply didn’t go through.
OR, sometimes, for some weird reason, messages show “Not Delivered”, but still go through. That could’ve happened. You best ask him if he got your messages.
If you deleted the message as it was going through, (the line was still showing at the top of the conversation,) then you may have stopped it from going through, on time.
