Family sharing plan for Apple Music
My family plan won't link with my wife's email, which is associated with a very old Apple Music account.

Sorry, your issue is not very clear.
You mean she's currently paying for her own Apple Music subscription?
If so, then she will keep her own subscription until her nest renewal, and at which time it should automatically switch over to yours.
You won't see any change on your side though, but she will no longer have an active Apple Music subscription. and will be using yours.
