My watch can only be unlocked by unlocking my phone (if the phone locks.) I am unable to change this setting on my phone because the area is grayed out. I want to be able to leave my phone at home and use my watch because I am paying for this service monthly.

In order to unlock your Apple Watch without using your iPhone, you'll need to be sure that you have a passcode set up for your Apple Watch. On your Apple Watch, go to Settings > Passcode.
