Setting Gmail as default in Safari for forwarding links
When I try to "mail" links in Safari it always defaults to Apple Mail. How can I change it to Gmail?

You may not be able to force these baked in apps to change and play nice w/ your gmail.
Copy and paste your links seems pretty common practice...for your issue.
You can try from Mail.app interface
Settings>General> default mail reader
Change the default web browser or email app on Mac
