For those who may find this in the future: ask them during the chat to email you a transcript.

To save an online chat transcript with Apple Support, you can utilize several methods. Firstly, you can take screenshots of each part of the conversation using the "Print Screen" button or the "Snipping Tool" on Windows, capturing specific portions of the chat window and saving them as image files. Alternatively, you can select and copy the text from the chat window and paste it into a text editor like Notepad or WordPad, then save the document with a descriptive filename on your Windows device. Additionally, some chat support systems offer the option to email the chat transcript to yourself at the end of the conversation, providing a convenient way to receive a copy in your email inbox.

Live chat with Apple is only available via iMessage. You can't use iMessage on a Windows PC, so this isn't helpful.

Again, not possible on Windows. May I suggest testing your chosen chatbot's output before feeding it to unwary users? Especially considering this post is eight months old.
