iPad Pro M2 as fully functioning head unit?

I know there are some out there who are making dash install kits for using iPads as head units in vehicles. is there now, or in the near future, a software program, app, hardware, connector, or diy hack that would allow me to use my m2 iPad Pro 11" as a FULLY functioning infotainment system, not with CarPlay, but independent of a factory or aftermarket unit? one that would allow me to control, volume, media , and most importantly in Texas, can I do away with my HVAC control knobs in lieu of HVAC scontrols on screen?
