It's the Accent color in Appearance System Settings.

What did you do to make them gray/black monochromatic?
Can you show us a screenshot of the three buttons? When a window is in the background its buttons turn mono color.
If the window is the active window they show their colors. Could this be the case?
I’m not at the Mac to figure it out exactly but it’s somewhere in the appearance settings in the system settings. I think the options are graphite or blue.
I didn't change them at all - they came like that with the latest Apple upgrade. I don't know why they did such a, to me, stupid idea.
