Does the latest back up erase the earlier back up?

I want to back up an old phone. I see an older backup. Will the new back up erase the old one?

iPhone 6, iOS 12

Yes, generally. The exceptions:

An iCloud backup keeps the 2 most recent backups
If you back up to a Mac (but not Windows) you can archive a backup - if you do, the next backup will not overwrite the archived backup
