I have two backups, one older dated 2022 and one most recent, if I delete the older one what happens? Do I still have everything saved from the most recent backup, or do I risk losing that too?

You can delete the older backup without it affecting the most recent one. The older one is likely from another device, since the iPhone 15 wasn't available in 2022.
The new backup should overwrite the old one from the same device. You usually just have one backup that continuously overwrites the previous one.
