Apple Card sharing for 2 owners
How do I setup my Apple Card account to add my wife as co-owner, so we each have separate credit tracking and credit reporting?

They are mutually exclusive. A joint account reports total spending to each account. In other words, if you spend $10K and your souse spends $10K, $20K utilization gets reported on your credit report and your spouses report.
If you want individual reporting, you want individual accounts.
