Mail Rules "Set color of message" Question

I'm trying to change the color of incoming emails so I know what generally they're about. When you set a rule to "change color of text," you're presented with a pretty basic color list, and "Other..." So I used "Other..." to change one group of senders to a lime green. Works. All's well so far.

The next group of senders I wanted to change to brown, which is not in the list of available colors. So I click "Other..." and— just the lime green is available. There is no way to change "Other..." to anything else. This is very annoying. Anyone have a work-around or other suggestion?

I'm using a brand-new 24-inch iMac, Apple M1 chip, running Ventura 13.5.
