what can be deleted from mac and not iCloud?
I have read ways to delete photos from Mac without deleting them in iCloud. What else can be deleted from Mac without deleting from iCloud?

Anything that you sync to iCloud is deleted if you delete it anywhere else. So, if you use iCloud Photos and delete an item on your Mac, it deletes in iCloud and on all connected devices. Same for anything that you sync.
