I got a MacBook for my son , he is 11 years old , so when I activated his MacBook i define it for him and me as parent , so he also see my apple id ( that I have because of my iPhone )and he now sees the photos that are on my phone

I am defined as parent for my Son's MacBook , and he sees the photos that I have on his MacBook

what am I suppose to do ? to define that his MacBook will not have any kind of data from my apple ID ?

Create him his own Apple ID. Each user needs to have a unique Apple ID.

Synchronization is via the Apple ID and you apparently have used yours on his Mac so his computer is basically yours by extension.
