Open the apple in upper left corner of your desktop>system settings, select Desktop & Doc. Under Desktop & Stage Manager unclick "on desktop." All of your stuff stops showing on your desktop and you still have full icloud connectivity (syncing, etc).

Move them to some other directory if you do not want to see them on the Desktop...(?)
iCloud Drive will move them off the Desktop
ref: Add your Desktop and Documents files to iCloud Drive
