If I transferred my SIM card from my old iPhone to my new iPhone, but still have the same phone number, will the messages still go through to the old iPhone even if in messages it is set up through phone number not Apple ID?

Transferring your SIM card should allow only one device to work with the phone number and should send your new text messages to your new device. Previous messages will only transfer with iCloud.
Set up iCloud for Messages on all your devices - Apple Support
Ensure you also have enough iCloud storage to allow the messages to sync:
Manage your iCloud storage - Apple Support
If you run in to any issues with moving the phone number to the new device, you'll want to reach out to your carrier to look in to that.
