So I do a lot of work on IoT devices and I usually use SSH (terminal commands) to interact with devices.
I was curious; would it be possible to display HDMI out from another device in real time on the Mac?
I.e.
If I had a raspberry Pi could I plug the HDMI out from the Pi in to the MacBook and view the picture in MacOS?
(I appreciate I'd need to use a separate mouse/keyboard on the Pi itself)

The HDMI port on the MacBook Pros are HDMI out, not in. You might be able to use an HDMI Video Capture device to do what you're intending.

Some of the data streams for your MacBook Pro are slow, and not demanding. Keyboard input, for example.
Display data is potentially THE fastest and most demanding data stream of all. Disk access is second.
The timing constraints make it very difficult to accept incoming data without purpose-built hardware to Capture incoming Video. Your MacBook Pro built-in HDMI and similar display data ports are for display data OUTPUT, only.
