Mail keeps changing flags to red
Whenever I flag an email on my iPad, regardless of the colour flag that I choose, it eventually changes it to red. What can I do to prevent this from happening?

Ensure that you have updated to the most recent version of iPadOS supported by your iPad. The tags appended to you post suggest that you have an iPad Air2; for this model, iPadOS 15.7.8 is current.
Having updated to the most recent supported version of iPadOS, should the issue persist, this would perhaps indicate that your Mail Provider may only provide limited support for mail-flags. Are you using an IMAP mailbox?
