How do you add the Gmail App, which is on my iPhone 12 mini to my new Apple Watch SE?

I don't believe the Gmail app is available for the Apple Watch.
You can, however, set up your Gmail account on your iPhone: Add an email account to your iPhone, iPad, or iPod touch - Apple Support
Then, after doing this, select this Gmail account for use on your Apple Watch: Manage mail on Apple Watch - Apple Support
