I've used Excel extensively for years on both Windows and Mac. The first thing I learned is Mac Excel is different for Windows Excel.

If you open an Excel file by double clicking it, you get an instance/window. The same happens for each additional file opened.

If you open range of files each gets its own window.

That's as close as you're going to come to what Windows does.

What I'd gain: I wish I could do this because when I am working on several workbooks, I can't just limit undo to the workbook I am working on, and if I'm not paying attention, I lose data. I must actually close all the other workbooks so that I can limit my undos to that workbook. It is extremely annoying.

Undo is supposed to be document-based, not application based.

It appears Microsoft has decided to alter that 40+ year macOS design standard for some reason. Perhaps try Numbers instead.
