Why does an email show as sent in mail app that was only a draft, when the real email was sent from a web browser

I worked on a draft email on my PC, in a web browser for MS 365 email, I have the account on my iphone in the mail app. I ended up rewriting the whole draft email, substantially changing the content, however in my mail app it shows the old draft email as "sent" where in reality, on the web browser in my MS 365 email account the real email was sent and not the outdated draft email.

What setting is the mail app using? to create this illusion, because the actual email with the correct content sent properly from my PC. The only thing I can think of is that it is using some type of prepositioning or there is a software code error. Why do you tech companies feel you need access to absolutely everything if this is a setting that I can adjust? Why not turn off these "features" and allow us to have an experience that doesn't create confusion. I have the picture of the fake sent email, it is in my sent items folder both for all mail and the account that I was to actually send it from.

I do not backup email to the cloud,
