Support documents seem to indicate

  • 4 for a M1 Max Studio
  • 4 for a M1 Ultra Studio
  • 4 for a M2 Max Studio
  • 6 for a M2 Ultra Studio

The studio display is a 5K display that requires a ThunderBolt connection. The article calls out how any ThunderBolt-connected displays can be connected to each model, by year, with Max or Ultra Processor.

it looks like the upper limit with all the right equipment for the 2023 Ultra processor is six Apple Studio displays over ThunderBolt.

You can't use it as a Target Display Mode display. No iMac released after Mid 2014 has that feature. (It went away at the same time that the first 27" 5K Retina iMac came out.)

There may be workaround solutions such as Luna Display or Duet Display. These might let you use your iMac as a second display, of sorts. You'd still need a real hardware display on hand, to set things up. You might also run into some compromises compared to using a real hardware display. E.g., even if you used the USB-C Luna Display and a wired Thunderbolt connection (taking up two of the Studio's ports, and costing maybe $180 for the Luna Display and the TB3-to-2 adapter and a TB1/2 cable), 5K refresh rates would still be limited to 30 or 45 Hz.
