Recording stereo sound on 2021 MacBook Pro M1?
What is the best way to record stereo music (line level audio) onto my MacBook Pro? Isn't that mic input only mono?

The headphone jack on the M1 MacBook Pro might only support mono input (e.g., from a headset with a three-ring connector), if it supports audio input at all.
If that's the case, you could get a USB sound card. There are all sorts of these, at different price and feature levels. The B&H Photo Video, Adorama, and Amazon sites appear to be good places to find them.
You can use the Audio MIDI Setup application in the Utilities folder to examine / change the settings of sound input and output devices, including built-in audio devices and USB sound cards.
