I was wondering can I record stereo audio via the headphone/AUX slot/jack-input.
I have a few stereo set recordings on a device that does not use USB data ports, I know sounds odd but that's how it is.
Otherwise via USB-C using the headphone/AUX to USB-C adaptor.

You'll need a USB interface to record stereo audio into the computer. Which interface you need depends on the device(s) you will be recording from.
Exactly which output type(s) does your device have?

FYI, this is typical of Apple's EarPods headphone connector layout. The Mac's audio output jack will conform.
