How do I transfer family member to another account?
I am trying to transfer my sons Apple ID to my wife account to setup an Apple Watch.

Note that "account" and "Apple ID" are the same thing, so I am not fully understanding what it is you wish to do.
I believe these are probably what you need if your son is not pairing with your phone any longer but will be pairing with your wife's:
