I deleted a note about 2 months ago…is there any chance I can find it/restore it?
I have attempted to find a note from my iPad, but I truly did delete it and it is over a month beyond the 30 dat restore mark. Any chance I’ll ever find it?

Notes synchronised with iCloud are retained (and are recoverable) for 30-days after deletion - after which deletion is permanent.
If you don't have an independent backup of the Note's contents, your data is irretrievable.

Possible if you have an older iPad or Mac with that note on it that has not synced with iCloud recently.
I somehow deleted some notes and did not notice for several months. I have a MacBook Air that I use infrequently so I air-gapped it by turning off my home wifi and then booted it up. After booting, I turned off wifi on the machine and proceeded to look through the Notes App. I found the two very important notes that had deleted. I copied the notes by hand and then was able to enter them back into Notes on my daily driver Mac.
I don't know if this would work with an iPad but in theory it should. It should also work if you could boot with an air-gapped backup disk on a Mac. The key is to not let it sync with iCloud.
