How to close all desktop documents and apps

New to Mac OS - used windows for years but I have a new MacBook Air - can you help?

Can I undo turning on Desktop and Documents icloud? I turned it on without realizing that it would create new folders, move a bunch of stuff around (breaking links within apps and projects etc...) and seemingly make certain files that were on my laptop inaccessible until they "sync". Big mistake and I want to undo but according to the info document, if I turn it off, all my files will be removed from my desktop and documents and will only be available on icloud!

How to delete Desktop and Document folders from iCloud Drive? Need help desperately! I enabled, more of curiosity, the feature Store Documents and Desktop files on iCloud and as didn't like the idea anymore I reverted back to keep the folders and files on my Mac. The problem is that now the two empty folders CANNOT be deleted from iCloud. I delete them and within a second are back in iCloud... No idea what to do, the Sync is off but cant kill the beasts...

As was mentioned, using Automator is the ticket. I created an Automator App and then put in Applications. Then created an alias on my desktop to it. Before I install any updates, I always run that first which then closes all open apps running on my computer. This also prevents the problem of the OS opening everything that was running after the update reboot.
