When I receive a notification from my Activity App on my Iwatch series 8 "You're Crushing it, Dad Clark Gregg me a beer all right. Your Move and Exercise Rings are way ahead for this time of day." Why am I getting this and how can I "edit" it?

That message seems a tad over the top even for an American device.
Try iPhone, Watch app, My Watch tab, Activity, and turn off Daily Coaching
On your iPhone tap:
Settings > Contacts
and note the Name listed in "My Info" and then go to that Name in your Contacts and see if part of that message appears as a Nickname. If so, edit it.
