edited video in FCP and then shared to YouTube. Changed resolution to 1080 X 680. Up loaded to YouTube and after 18 hours it is only showing on Youtube as SD (480)

Is it really 1080 x 680? This is not a standard video size, and that is perhaps why it is not showing as such.
If it were 1920x1080, or 1280x720, it should work, I suppose...
Can you switch to a higher resolution?
YT sets a resolution based on what it thinks is the best for your available bandwidth. You can force a higher resolution, but it might stall the playback.
I uploaded 1080p video yesterday but still is only showing up on YouTube as SD
