What metadata that are not associated with artwork will be updated?
Not completely clear, but lyrics is one possibility. Might not be relevant if you mainly listen to classical music.

Typically. It is up to the producer to decide how to break up an album into individual files. You might have a single track that comprises more than one movement.

The distinction is likely between purchased tracks, those that you import from other services or rip from CD, and any Apple Music content you may have via a subscription. Exact behaviour may vary for each class......
• "Allows": means to give permission. But will it do it anyway, even without permission?
No, if you don't give permission then this system shouldn't make any changes. In practice I have seen custom metadata for purchased items get reset to the original store data. A workaround for this issue is to hide the purchase from your purchase history.
This click box is in any event not clicked on my device. Yet, my computer spends endless time (it says) "updating artist artwork". How do you stop it doing that?
In some cases you may need to delete the artwork cache allowing it to be rebuild from scratch. Any existing images in your media need to be added to the cache to support artwork throughout the app, even if you don't generally have or care about the artwork.
The issue is clear: there is an option to update something in Music, which I've not chosen because the artwork is not important to me. But, the device tells me it's doing it anyway. Why? How do I stop it?
It's a desktop iMac on Monterey 12.6.8 (with super-woofers and a competition clutch).
Music/Tunes should display art in most views provided at least one track from the album has embedded or associated artwork. The cache should automatically update whenever there is a request to show a relevant image. That said it seems the cache in Music gets stuck sometimes. The artwork cache should be stored at ~/Library/Containers/com.apple.AMPArtworkAgent/Data/Documents where ~ is your user's home folder. Deleting the cache should force it to be rebuilt. Perhaps Music will do a better job next time around.
