I recently upgraded my plan for iCloud two days ago and it’s still updating my photos. How long do I have to keep my phone plugged in and connected to complete the update faster

The short answer, until it’s done. The longer answer: when the device is plugged in and locked your photos will sync. Depending on the size of your library the initial sync could take days.
