I’m a devout Apple guy with 9 devices ranging from iPhones to IMacs but I have absolutely no idea why I’m paying $16.95 every month for Apple One. Anyone ever use it? Why? Appleicious thanks. RB

Apple One is a bundle of services. For the $16.95 plan, see the following from Apple One - Apple

If you don't use any of those services, you can cancel. There is an Apple article that explains how to cancel subscriptions. Click on the following link: If you want to cancel a subscription from Apple - Apple Support

If you use one or more of the services, you can subscribe to them individually. If you use most of the services it may be cheaper to keep the bundle subscription.
