Can USB-C pd cause damage on a Mac mini
I have a Lenovo Thinkpad USB-c docking station. The dockingstation can be used to charge a laptop through te USB-C cable. Is it safe to connect a powered USB-C cable to a Mac mini? Or wil it cause damage?

It won't cause damage. The Mac mini will ignore any power coming in on it's USB-C ports. I've been using my Mac mini for years plugged into a display that would provide power if it were plugged into a laptop.

Getting Multiple External Displays:
You docking station is not made to get dual monitors. To do that you need to use two docking stations, or this particular docking station, which allows for dual monitors: The J5 USB-C Dual HDMI Docking Station allows for more than two extra monitors. How so? Well, plug in a display projector the Mac using the USB-C Digital AV Multiport Adapter and then plug the J5 hub with 2 HDMI displays (one 4K), and then you'll have 3 external screens. It all mirrors and extends.
