I just ordered two iPhone 15s. I swear with previous phones i was asked my ATT phone number and the phone came pre assigned that number. I was not asked this time and I fear both phones will arrive with my primary contact number. OR ... will I be asked the number as part of the activation process?

If you identified AT&T at the time or order, it showed the AT&T account you own. If you have multiple numbers on your AT&T account, when you set up the phones (using the Quick Start method), you'll be prompted during setup to assign the number from your account you want for each iPhone.
Worst case is you didn't identify AT&T as your carrier and when phone arrive, you'll just need to call AT&T and have your numbers ported over to the new phones.

If it is not set up the way you want as regards to telephone numbers, call your carrier (ATT?) to arrange a transfer. Since this directly relates to telephone service it makes more sense to call them than Apple.
