I had Outlook for Mac and I knew exactly where my email contact list was. I decided to ditch it and use Mail and it's clearly an inferior product, which really surprises me. I can't find my contact list anywhere. Can anyone help?

Many iPhone users prefer to link their iPhone contacts into iCloud, and then link iCloud contacts into Contacts on the Mac to get a large common set of contacts across all devices and many Apps.
You are probably looking at this list, internal to Mail:
Mail > Window > Previous recipients
What I finally figured out is in the "To:" field there is a + sign all the way to the right. If I click on that, the list comes up, but not all names. I will see if I can make your suggestion work
