apple watch not locking off of hand
I have series 8 watch and it has wrist detection on. So i think it supposed to lock off of hand. But it is not at all locking.

You have a passcode set on the watch? This is needed for it to work, also, if you have “Unlock with iPhone” enabled when you put your watch on if you unlock your iPhone, it will also unlock your watch if it is close by.
You can also try force restarting your watch if it still doesn’t work. Press and hold both the side button and Digital Crown until you see the Apple Logo. Once you see the logo you can release both buttons and allow the watch to continue loading as usual.
