Focus application
I have focus set for Sunday to stop at 8:00am. It is now Monday morning 6:55am and focus is still on. What time is used by Apple to designate a day? Is it midnight? Or another time?

It is a combination of date, time and other factors as explained below:
Use Focus on your iPhone or iPad - Apple Support
Note: it could have turned off on Sunday and then back on again on Monday depending on date and time factors.
