If I update my iOS to the newest version will all my apps be updated too? Since I have chose not to update some of the current ones I have

iOS updates and app updates are separate. It's possible that some apps may not work properly with the new version of iOS but you'd need to check each app's App Store page for that information and then decide.

There is one caveat to what I said. I'm speaking of all 3rd party apps. Those will not update unless you tell them to. However......all the default Apple apps that install with the OS will be updated and there's no way to stop that.
My recommendation would be to update all the apps that have updates first. Then insure your phone is fully charged and has at least 8-10 gb of free space.

Correct.
I thought my response was pretty straight forward. Update the apps first suggests you have to update the iOS and apps separately.

Yes. Unless you turn on auto-updating.
the thing is i don’t want to update the apps i want them to remain the same without ios update interfering
