When Receiving calls and messages instead of using my telephone number of the iPhone is using my email how can I fix this issue?

Your Apple ID (email) may be used to address iMessages and FaceTime transactions to you.
Check Settings > Messages > Send & Receive, as well as Settings > FaceTime > Send & Receive.
